Apple Cutthroat Crisp (He won't really cut your throat...I hope)

Prep Time: 15-20min.
Bake time 25-30min

Note: Caramel is awesome on top of these guys. I guess you could have them without it but why would you? I think this is my favorite recipe thus far.


Muffin:
2 Cups Flour
1 Cup Sugar
2 Eggs
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/2 Cup melted butter
1 Tsp. Vanilla
1 Tsp. Cinnamon
2 Cups Apple (chopped into small chunks)

Chop apples up and set aside. In a large bowl crack eggs and beat well. Add melted butter, vanilla, cinnamon, flour, sugar, baking soda, and baking powder. Mix well. Add in apple chunks and mix until the apple chunks are evenly distributed. Pour into muffin cups or pan.

Crispy Crumbles:
1/3 Cup Brown Sugar
1 Tbs. Flour
1/4 Tsp. Cinnamon
1 Tbs. Cold butter

In small bowl mix brown sugar, flour and cinnamon. Cut in COLD butter and mix with fork until it starts to form chunks. (If the butter is not cold the butter will melt in and the mixture will turn into goop.) Sprinkle crumbles on top of muffins.

Bake the muffins at 350 for 25-30minutes. After the muffins are out of the oven start the caramel.

Caramel Sauce:
8 Tbs. Sugar
4 Tbs. Water

Set a small heavy bottomed pot on high heat. Pour in sugar and water. Bring the water and sugar to the boil without stirring. Then, lower the heat to medium-high and continue boiling. After a few minutes the sugar will start to brown. If the edges get dark, swirl the pan to even out the color. When the caramel turns an amber colored brown it's ready. Use a small spoon to drizzle the caramel over the top of the muffins.
