Apple Cutthroat Crisp (He won't really cut your throat...I hope)

Prep Time: 15-20min.
Bake time 25-30min

Note: Caramel is awesome on top of these guys. I guess you could have them without it but why would you? I think this is my favorite recipe thus far.


Muffin:
2 Cups Flour
1 Cup Sugar
2 Eggs
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/2 Cup melted butter
1 Tsp. Vanilla
1 Tsp. Cinnamon
2 Cups Apple (chopped into small chunks)

Chop apples up and set aside. In a large bowl crack eggs and beat well. Add melted butter, vanilla, cinnamon, flour, sugar, baking soda, and baking powder. Mix well. Add in apple chunks and mix until the apple chunks are evenly distributed. Pour into muffin cups or pan.

Crispy Crumbles:
1/3 Cup Brown Sugar
1 Tbs. Flour
1/4 Tsp. Cinnamon
1 Tbs. Cold butter

In small bowl mix brown sugar, flour and cinnamon. Cut in COLD butter and mix with fork until it starts to form chunks. (If the butter is not cold the butter will melt in and the mixture will turn into goop.) Sprinkle crumbles on top of muffins.

Bake the muffins at 350 for 25-30minutes. After the muffins are out of the oven start the caramel.

Caramel Sauce:
8 Tbs. Sugar
4 Tbs. Water

Set a small heavy bottomed pot on high heat. Pour in sugar and water. Bring the water and sugar to the boil without stirring. Then, lower the heat to medium-high and continue boiling. After a few minutes the sugar will start to brown. If the edges get dark, swirl the pan to even out the color. When the caramel turns an amber colored brown it's ready. Use a small spoon to drizzle the caramel over the top of the muffins.

Banged Up Banana Chocolate Chip

Makes about 12 muffins

1 Stick of softened butter (8 Tablespoons)
4 Tbsp sour cream
4 bananas
1 Tsp. Baking Soda
2 Eggs
1 cup of Brown Sugar
1 1/2 Cups All Purpose Flour
1 Tsp Salt
1 Cup Mini Chocolate Chips. You Can add more if you want them extra chocolatey

In Large bowl mash up bananas until chunks are minimal. Add in eggs, sour cream and butter and mix together. Add in Baking Soda, Sugar, Salt and Flour and mix well. Lastly gently mix in the chocolate chips.

Pour into muffin pan and bake at 350 for 20-30 Minutes!

Badass Blueberry Muffins


Bake time: 25-30 Minutes
Muffin 
1/2 Cup Butter Softened
3/4 Cup Sugar
2 Eggs
1 Tsp Vanilla
2 Cups Flour
2 Tsp Baking Powder
1/2 Tsp Salt
1/2 Cup Milk
1 Pint of Bluberries (or less.....but that's just crazy.)
1 Tsp Cinnamon

Crumbles
2 Tbs Flour
2 Tbs Brown Sugar
1/4 Tsp Cinnamon
2 Tbs Chilled Butter

Preheat Oven at 375 degrees.
For the muffin mix cream butter and sugar in large bowl. Stir in eggs one at a time, beating well. Stir in Vanilla and Cinnamon.
In a separate bowl stir 2 Cups Flour, Baking Soda and Salt. Stir mix into creamed mixture alternately with milk. Gently fold in the Blue Berries.
For the crumbles mix 2 Tbs. Flour, Brown Sugar and Cinnamon in a smaller bowl. Cut in Butter until mix resembles crumbs.
Pour batter into lined muffin pan and sprinkle with crumbles. Bake at 375 for 25-30 minutes
